Pumpkin Spice amazingness

Hello!! Its Wednesday! this week is flyyyying by... =) is it for you as well??
I took a couple days off from the gym but I'm gettin back at it today... trying to kick this cold! It is RELENTLESS!

Before I go kick my booty, I thought I'd share my amazing muffin recipe!
I adapted it from my pumpkin spice cookies --- I made them into muffin form with some extra add-ins ;)

I give you:

Pumpkin Spice Dark Chocolate & Granola Muffins (say that 5 times fast. haha)

Ingredients:
  • 1 - 15 oz can pumpkin puree
  • 1 Spice Cake Mix (just the powder, do not make the mix.)
  • 6 T. Dark Chocolate Chips
  • 6 T. Bare Naked Granola{I used Fruit/Nut Bare Naked} (or other granola of your choice)
  • (NEXT TIME: I want to add in flax seed, and oat bran. but I forgot this time ;[ womp womp)
Make These Beauts!:
  • Mix first 3 ingredients into large bowl
  • Divide Mixture into 1 jumbo muffin pan (be sure the spray the pan before you put the mixture in!)
  • Top each muffin with 1 T. granola
  • Bake at 350 degrees for 15-20 min (I just checked them every so often with the "toothpick test") :)
Enjoyyyyyy!!!!{p.s. they turn out GIGANTIC... I can only eat a 1/2 unless I want to be STUFFED. ha!}
