Im obsessed with my crock pot, so I needed to come up with a crock pot chili recipe (husband friendly) :)
I used many of the usual suspects in my famous chili, but a few unexpected guests arrived.
The usuals, except I had this can of grillin beans in the cupboard and thought... why not? "Black Bean Fiesta" -- sure! |

- 4 chicken breasts or 2 large chicken breasts (mine are essentially 2, I just butterfly them&trim fat)
- 2 cans diced tomatoes [no salt added] {not drained}
- 1 can diced tomatoes w/ chiles (or 3 reg cans diced tomatoes if you don't like heat){drain a little juice out}
- 1 can green chiles (or leave out to make less spicy){not drained}
- 1 can chili beans{not drained}
- 1 can bush's Black Bean Fiesta grillin' beans
- 2 celery stalks {cleaned, chopped}
- 2 green peppers {cleaned, chopped}
- Red onion - chopped {I used about half of a small red onion}
- few squirt of ketchup {about 1/4c. or little less}
- fresh cracked pepper, chili powder and garlic powder to taste
- Mix all ingredients (except chicken) into a large crock pot, mix well.
- Submurge the chicken breasts into mixture
- Set crock to low for 8 hours or high for 4 hours
- Remove chicken with tongs and place on cutting board --- shred.
- Return chicken back into chili mixture
- Turn down to low or "keep warm" until read to serve.
- Top with your favorite chili toppings. Delish! Enjoy!! :)
