Good Wednesday Morning All!! ~
How is it going this morning?? My allergies are still kickin my butt, nothin new there;) ... going to get in a nice long walk or quick burst elliptical session today, weights at home + planks... life is just so busy lately! But its no excuse.
This weekend was a wash for working out/eating healthy.. back on track w/ all healthy eats --- now the exercise needs to come back to me:)
We are going to Rich's parents this weekend overnight, to the "Big City" :) aka Mad-Town ;) cant wait to get some amazing eats... I may have Rich take me to Trader Joes too, so I can at least say I've been there!! :D Do u like Trader Joes?
Last night, Rich and I played with our "son" [[heehee]] ~ and he grilled the chicken I'd been marinating all day (in Robust Italian by Wishbone, mmmm). I had him grill extra for leftovers on salad;) Speaking of salad, thats exactly what I did with dinner, with all of my fresh garden pickins'

The Garden Beast! ~ we learned alot with our first year of organic gardening. We learned the beans need their own area, they have attatched themselves to everything. Also, the cucumbers are going INSANE and need more room too, so do my strawberries... and so do the tomatoes..and my herbs? going nuts as well... it has slowly turned into a forest, but I LIKE IT :) everything is growing beautiful, and its so nice to make a salad from your own back yard... Do any of you garden?? If not, you should. Let me know if you have questions! I learned from a very dear friend of mine, and for being our first year, it sure has taken off!! Just Call me Mrs Green Thumb :D |

The salad beast![sorry its kinda dark] ~ 2 small grilled chicken breasts chopped on a bed of lettuce from the garden + all the fixins:
organic shredded carrot, green onion, red onion, celery, tomato,cucumber,sunflower seeds(the pre-shucked ones;)),little reduced fat shredded cheese + feta, drizzled w/ organic balsamic vinegarette dressing.... let me tell you --- SO FILLING and SO AMAZING.
I can't wait to make another salad beast this week!! Thanks to hubby for grillin me extra chicken :D |

Ummm that salad looks pretty freaking amazing!!! Never thought about using green onions, but I think I'm gonna try it!
