Longest Post EVER... ;D

Oats, Freezer Corn, an ER trip, Meatless Monday ~ OH MY! Im exhausted ;)

OK...Lets begin with amazing oats I have been creating lately! I am just loving the Better Oats raw organic oats + Great Value brand light vanilla organic soy milk for a base(its under $3! holla!)...

I always have to add a little truvia, then chocolatey goodness:)
CHOCO FUN: fiber one brownies, granola thins, protein powder, etc!

Todays mix: with a 1/2 luna bar&white choc wonderful! :) nummyy
 What goes great with big bowls of oaty goodness?... great coffee and an uber cheap febreeze candle!

This candle was on sale for 3.97 + I had a 2 $ off coup ~ what what!
and coffee out of my amazing Beloit mug from mama is even better yet:)



Sunday was a freezer corn kinda day... thanks to my bestie Kristi for letting us do this in her kitchen! Had sooo much fun!

after the corn extravaganza I gardened outside for a bit, got some good loot:)
Onto: Labor,Meatless,ER - MONDAY.
Happy Labor Day! I hope everyones was nice and relaxing:) mine was, I cleaned, organized, and was feeling accomplished!
I sat down to relax with a beer in hand, ready to blog...
I then hear "Get the keys we have to go to the ER" ... I half-laughed, silly husband is joking, we *just* went to the ER less than a month ago! ... Nope, he was serious.
He was chopping the last log from a pile of branches he had sawed down from our forest-like backyard and must've mistaken his leg for a log. 12 stitches later (18 total for the month) -- we are home in bed. I will spare the graphic photo I took (sent to my RN sister, to double check the stitches were good enough...yes, Im a protective wife. ha!)

Quite the labor day festitivies!! Another labor day festivity would be --- my very first Meatless Monday~ which was very successful!!

MEAL #1- oats and coffee:) (pictured above.)

MEAL #2- meatless "taco salad" - bed of whole grain chips (about 8 - crushed a little), soy crumbles w/ chipotle seasoning (heated to directions), 1/4 c. red fat cheese, taco sauce, salsa, lettuce, tiny bit of natural sour cream AND a fork :)

Snack - pita chips and hummus and a half beer -- then running out the door to ER:)
Snack 2 - 4 gardein "chicken" strips (I love this brand of products, btw!)

MEAL #3- grilled mushroom lovers burger from morningstar farms:) I just love their products..surriously.
on burger-red. fat pepperjack,lettuce,tomato,onion,ketchup,mustard and a little cracked pepper mayo(the new kraft kind, oh yum!) on a whole wheat thomas bagel thin.

I did throw a mini drumstick in my day as well, I cannot resist ice cream ;) Im from Wisconin, dairy runs in our blood.


OK -- I think I have officially brought everyone up to speed on my loooooong weekend. Time for bed, back to the grindstone tomorrow:) Was everyones weekends as eventful as mine?! I need to get back onto my workout train tomorrow... that is the goal for the week, before another roadtrip this weekend! Talk to me loves!! xo {sorry this was SOOOO long!!}}
